Hatsuga Genmai is cooked the same way as normal white rice. It can be mixed with white rice and cooked together (2:1). It is also excellent as a base to make delicious Zosui rice porridge.

Hatsuga Genmai is literally "whole rice with a start of germination". The taste is closer to white rice than normal brown rice. Brown rice is considered far more nutritious than white rice, as white rice is mostly starch. Brown rice retains its skin that is rich in fibre and vitamins and minerals. Hatsuga Genmai retains both the advantages of normal brown rice and more. It is put through a germination process that increases its GABA (gamma-Aminobutyric acid) levels by up to 10 times that of white rice and 3 times that of ordinary ungerminated brown rice. It also elevates protein levels and significantly increases essential components such as ferulic acid, lysine, magnesium, potassium, vitamin E, vitamins B1, B3 and B6.
Germination also alters both taste and texture of the brown rice. People who has found normal brown rice to be unpalatable, would find this rice a most welcome change. Softer in texture and with a pleasant nutty fragrance, even children would like it.
All rice sold has been harvested within the year. Should you receive any rice that is older than a year, we would gladly exchange or refund the cost.
